Course Description
Welcome to NUTR 100! This course introduces the field of nutrition. It focuses on nutrition’s role and application to human growth, disease, and well-being throughout life, and discussions on current nutrition and diet trends. Through course discussions and assignments, students will evaluate their nutritional status and assess changes they may make to create a personalized nutrition and wellness plan to improve their overall health.

Objectives
- Use standard food guidelines to select foods and create a dietary plan that helps to optimize individual health and fitness.
- Comprehend information regarding digestion, absorption, macronutrients, energy balance, weight management, and nutrients in relation to disease risk.
- Discuss the effects of lifestyle and personal habits on health and nutritional status.
- Use standard food guidelines to make practical changes to your own diet to enhance health and nutritional status.
- Analyze the current obesity epidemic and how it impacts our country, community, and our individual lives.
- Analyze current print and media information for scientific accuracy to nutrition principles.
Materials
Course Textbook
The course will use the following required textbook:

This textbook is provided through the Department of Nutritional Sciences and is the first edition of an open educational resource (OER) textbook for NUTR 100: Nutritional Applications for a Healthy Lifestyle. The text was developed with the assistance of an Affordable Course Transformation grant from The Pennsylvania State University. There is NO cost to access the textbook.
PackBack Questions Access
The PackBack Questions Platform is an app within CANVAS that is required to complete the course and will have to be purchased. PackBack Questions will be used for online discussion about class topics. Depending on your preference for course materials, please choose from one of the following options to purchase PackBack:
- World Campus Bookstore: ISBN#: 978-0-578-98615-9. This will be purchased through the World Campus Bookstore. Students will receive instructions for how to access PackBack at the time of purchasing. *See the following PackBack Purchasing Note before purchasing.

*PackBack Purchasing Note: Financial aid is ONLY able to be applied when purchasing PackBack through the World Campus Bookstore. There is a discount that is applied for when using PackBack in multiple courses, but the discount is ONLY accessible when purchasing PackBack directly through the course website. If students go through the bookstore it does not fall under the discount package.
Note: Whether you purchase PackBack from the Bookstore or through the course, you will also likely receive a welcome email from PackBack with instructions on how to set up your account. You can register using either method.

Syllabus and Orientation Quiz
A brief quiz will require you to answer some key questions about the syllabus and orientation. Although this quiz will NOT be graded, it is a REQUIRED part of the course. To access material after the first lesson in this course, you must complete this syllabus and orientation quiz and score 90% (9 out of 10 points). You will have unlimited attempts to do so. Refer to the Course Calendar for due dates.
If you do not succeed in completing the quiz, you must notify the instructor.
Quizzes
There will be at least one quiz at the end of every lesson throughout the semester. Quizzes are based on the course content, assigned readings, and instructional videos covered within the corresponding lesson and consist of multiple-choice, matching, and true/false questions.
The quizzes will be available for the entire week in which they are due and must be submitted by the end of the week in which they are due. You must take the quiz within this timeframe as there will be absolutely no makeups offered for quizzes. Refer to the Course Calendar for due dates.
The lowest quiz score will be dropped from the final grade, therefore, no make-ups or late submissions will be permitted for any reason.
Notes:
- We do NOT recommend taking quizzes using the Canvas mobile app; use the web version of Canvas.
- Your work will automatically be saved as you complete the quiz. If you experience technical difficulties, contact the HelpDesk and your instructor immediately.
PackBack Discussion Assignments
The Packback Questions platform will be used for online discussion as a way to integrate and apply course concepts throughout the semester. Packback Questions is an online curiosity community where you can be fearlessly curious and ask BIG questions about how what we’re studying relates to life and the real world.
PackBack assignments will be graded and will count towards your overall course grade. There is at least one (1) PackBack assignment for each lesson, unless stated otherwise. There will also be one (1) additional Final Summary post that will be completed towards the end of the semester (refer to the assignment instructions for more information).
Make sure you take some time to review PackBack information in the Course Orientation module to familiarize yourself with the platform, including:
- assignment goals,
- grading requirements,
- posting requirements and guidelines.
PackBack Assignment Listing on Calendar, Access, and Grading:
There will be 2 parts to each PackBack Assignment, an Initial Question/Posting, and an Answer/Response. The Initial Question/Posting and Answer/Response will each have a separate due date. For example, on the course calendar:
- Initial Question Postings: The initial question posting for Lesson 01 PackBack assignment will be listed as L01 Defining a Healthy Lifestyle PackBack Discussion Initial Question.
- Answering/Responding to Peers: Responding to peers for the Lesson 01 PackBack assignment will be listed as L01 Defining a Healthy Lifestyle PackBack Discussion.
You will complete each part of the assignment within the Packback platform. To do this, click on the Packback Questions link in the course menu.
The overall grading for the question/posting assignment and the answer/response assignment will be aggregated in the PackBack platform. After the due date, grades will be imported into Canvas and can be viewed in the Canvas gradebook.
This will be the same format that will be used throughout the course for all PackBack assignments, unless stated otherwise.

Personal Nutrition Portfolio (PNP)
The Personal Nutrition Portfolio (PNP) includes several submissions throughout the semester. Each assignment relates to relevant content in the course at that time, but is also cumulative in nature. You will be expected to reflect and utilize information from earlier assignments as well as integrate information from your PNP assignments to maximize the learning opportunity.
The PNP includes the following assignments:
- Assignment 1: Baseline Eating Pattern Assessment
- Assignment 2: Personal Nutrition History
- Assignment 3: Micronutrient Analysis & Looking Forward
This series of assignments is based on Universal Design for Learning (UDL) principles to promote engagement, representation, and action, as well as expression. The PNP and its related components are for personal reflection and to gain insight into your own eating pattern and to identify areas of improvement through your exploration of a selected eating pattern. Using retrospective analysis, current eating pattern analysis, as well as looking at variables of interest such as family history, individual recent history, stress/trauma, and physical activity, you will take a comprehensive look at the factors in your life that contribute to your overall eating pattern.

Due Dates
All assignments are due by 11:59 PM Eastern Time on the date indicated on the Calendar, unless noted otherwise. (Due dates can be also be viewed under the Syllabus tab.) Please be aware that Canvas follows the Eastern Time (ET) time zone. Assignment due dates adhere to this time zone, and it is your responsibility to submit assignments accordingly. Late Work Policy
For each day an assignment is turned in late, you will receive a 10% penalty to your grade. For example, an assignment that is turned in three (3) days late will have a 30% reduction in grade. If you have any questions about turning in late assignments and how this will affect that assignment’s grade, please contact your instructor immediately.
Note: Late assignments will not be accepted during the last week of the class.

Final grades will be assigned based on the following grading scheme:

If you have a question about any of your grades or would like to contest a grade that you earned, you must do so within 1 week after receiving your grade. I will email the class when project grades are released. This is a good time to go in and view your grade and notify me of any concerns you may have.
